In August of 2019, Apple Podcasts rolled out a bunch of new categories for podcast creators to choose from. They expanded, rearranged, and removed categories. This change allowed podcast creators to better categorize their shows and give them a place that makes sense. While this list still needs more, it a definite improvement over the options that Apple had offered for years.
If you just starting out, remember that you get to choose three category>subcategory options. Listed below is what they are right now.

I reccommend choosing 3 categories because your podcast will appear in all three locations. It rarely to hurts to be listed everywhere.
